How to make Crispy Ivy Gourd Fry | Crispy Kovakkai Fry | Crispy Dondakaya Fry
This Ivy gourd fry | Crispy Kovakkai fry is an easy to make recipe which can be prepared in 15 minutes. It goes well with any kind of pulaos, bisibelabath, south indian sambar rice, etc. This can also be taken as the evening snack along with a cup of tea.
This Ivy gourd which is also called as Tindora and Kovakkai in Tamil and Dondakaya in Telugu. The Ivy gourd is mostly used in Indian cuisine like in making curries, rice or fries.

Recipe to make the Crispy Kovakkai Fry
Lets see the recipe to make the crispy kovakkai fry | crispy ivy gourd fry.
- Ivy groud / Kovakkai – 1/4 kg
- Gram flour – 1 tbsp
- Rice flour – 1 tbsp
- Corn flour – 1 tbsp
- Chilli powder – 1/2 to 3/4 tbsp adjust according to the spiciness
- Turmeric powder – 1 /4 tsp
- Salt as per taste
- Asafoetida – little
- Oil for frying
- Water – little to sprinkle
- Curry leaves – little

Try to buy fresh and firm ivy gourd / kovakkai for this recipe. Wash them nicely and pat dry them.

Now cut them into half first and then cut into thin slices lengthwise. At least try to cut them into four pieces each half. So that, they turn very crispy while frying.

Take another bowl and add besan/gram flour, rice flour, corn flour.

Then add the chilli powder and salt

After that, add the turmeric and the asafoetida and mix them nicely. If you want you can add cumin powder and little garam masala also. I have not added the later too.

Mix the spices well.

Add the mixed spices to the ivy gourds and again mix them well. Let the powder coat them well.

If you want sprinkle very little water and mix them. Allow them to rest for 10 minutes.

Now we need to fry the vegetables, for that, in a vessel or wok, add enough oil for frying. Heat the oil in medium flame. Once the oil is hot enough, reduce the flame first and then add the veggies little by little by batches. (of around 20 to 30 pieces). Try to be careful while adding the veggies to the hot oil.

Keep frying them, until all the veggies turn into golden brown in color and turns crispy.

Now filter the oil and remove them from oil. Use kitchen tissue to filter the oil, if needed.

If you have any remainings of gram flour mixture after mixing the veggies, you need to waste them. Instead, mix them with the curry leaves and fry them in oil.

It gives nice taste to the crispy veggies. But this step is purely optional only.

Once you have fried the curry leaves, add them to the fried veggies. Mix them.

Crispy tasty and spicy Ivy gourd Fry | Crispy Kovakkai Fry is ready to be served.

Serve it with sambar rice or any kind of rice dishes.

Notes
Add little cumin powder and garam masala for extra flavor and spiciness.
Adjust the chilli powder according to your spiceness.
If you like little tangy taste, then you can add little amchoor powder.
Also serve this crispy dish sprinkling little chat masala if taken as a evening snack.
