Fried Egg Sandwich is an easy sandwich recipe which can be prepared in just 5 minutes of time. It is just the egg which is fried, and served with the toasted breads and some veggies.

This Fried Egg Sandwich recipe is our family favourite and I used to prepare this when my kids ask me to give some snack in evening time. This sandwich is not only easy, but also healthy dish as it has egg as well as more veggies stuffed. If you like to give cheese, you can include a cheese slice.
Also instead of bread you can use the burger breads and also use wheat bread and make it even more healthier. The choices of veggies is completely optional. This sandwich can also be taken as a breakfast or even in dinner and it really makes you feel full.

- Sandwich bread slices / Normal bread - 2
- Egg - 1
- Cabbage carrot, tomato - Cut thinly lengthwise
- optional veggies - lettuce, capsicum, cucumber
- salt - as per taste
- pepper - as per taste
- Garnishing - coriander leaves
- Cheese slice - 1 Optional

Slightly Toast the bread slices on both sides with either a tsp of butter or ghee or oil. Keep it aside.

In a pan, slightly brush some oil and add in an egg.

Add required salt an pepper.

Cook both the sides. If you want half boiled egg, then do not flip to other side. We used to have eggs fully boiled. So we cooked them fully.

Now remove the egg from the pan and place it between the bread slices.

Add the vegetables of your choice like shredded cabbage, grated carrot, tomato and coriander leaves.

Again sprinkle some pepper and salt.

Cover with the second toasted bread.

Cut them diagonally.

Serve it.

Notes
- You can add any vegetables of your choice, like cucumber, capsicum, olives, jalepano etc.
- Also you can add some cheese slices or grated cheese when giving to kids. Here i didn’t add.
- You can replace bread with burger buns and convert to fried egg burgers.
- Also add in some mustard sauce or mayonnaise if you love them.
