Oats soup | Oats Vegetable Soup is a healthy and tasty soup which is good for health as well as losing weight. This Oats soup | Oats Vegetable Soup has became my recent addition to my favourite soup recipes, as it is very easy to prepare and tasty as well as healthy to have it. For this soup we no need to add any thickeners, as the oats itself thickens the soup.

Ingredients
  • ginger - 1 inch chopped finely
  • garlic - 4 to 5 clovse chopped finely
  • onion - 1 med size chopped finely
  • rolled oats - 1/2 cup
  • water - 3 cups can replace with vegetable stock or chicken stock, also, water can be adjusted according to your desired consistency
  • vegetables - 1/2 cup carrot, beans, sweet corn, peas, potato etc
  • green chilli - 1 adjust according to your spice level
  • pepper - little
  • herbs - little optional
  • salt - as per taste
  • coriander leaves or spring onions - little
Instructions
  1. In a pan, add butter or olive oil. Butter gives, great taste so I have added here. If you are preparing this soup for weightloss then add olive oil.
  2. Add the finely chopped ginger and garlic and fry them for a while.
  3. Now add the finely chopped onion.
  4. Saute them.
  5. Include the Rolled oats now and fry them for about 2 to 3 min.
  6. For 1/2 cup oats, I have added 3 cups of water.
  7. Water can be adjusted according to your wish. If you want thick, you can little water. Also 1 cup of water, can be adjsuted with vegetable stock or chicken stock.
  8. Now add the vegetables and cook them. Since I have added frozen veggies, I have not sauted them along with oats. If you are using fresh vegetables, then add them first and saute them for a while.
  9. Add salt.
  10. cover and cook the veggies for 10 min or until the vegetables are cooked.
  11. In between cooking ( of about 5 min ) I have added the green chilli and the herbs. If you want you can add the chilli at the beginning itself. As my chilli is very spicy, I cannot give to my kids, if it is cooked nicely, so i have added them after half cooking.
  12. Adjust salt and add the pepper.
  13. Here no need to add the corn flour, and oats water itself, makes the soup thick. Add spring onions or coriander leaves.
  14. Switch off the stove and serve in a bowl.
