Instructions
Preparing the batter for adai
In order to make this vegetable godhumai adai, in a big bowl add the grated carrot and grated cabbage.
To This add finely grated potato, finely chopped green chilli, and finely chopped tomatoes.
Also.add the cumin seeds, chilli powder and the turmeric.
Now add the required amount of salt and chopped curry leaves and coriander leaves.
Here I have not added the coriander leaves, since I dint have that at home while preparing the Adai. Now add the whole.wheat flour to this.
Now slowly add the water and start mixing it. I have added about 2 and 1/2 cups of water (around 400ml) to make the desired consistency.
Instead of adding the water all at a time you can add it one cup at a time and start mixing the flour without any lumps.
the consistency should be thick for this recipe and not thin liquid has that of Dosa batter. Once you have obtained the correct consistency then you can stop adding the water. Let it rest for about 5 to 10 minutes so that you get a soft Vegetable Godhumai adai.
Cooking the Adai
Heat a tawa or pan, sprinkle little oil and slowly rub with tissue paper. Now add laddle full of the Adai batter and spread it in round shape slowly.
Add just 1 tsp of oil around the Adai for cooking and let it cook for 2 to 3 min on medium flame.
once the adai is cooked, slowly flip it to the other side and cook that side too for about 2 to 3 minutes.
When both the sides are cooked well, remove it and serve it hot in a plate with your favorite chutney.
